Thoughts: I love a good one-pot meal! This was surprisingly simple to throw together. For some reason, I had assumed it would require a lot of prep work, but I used a mandoline for the onions and shallots, which made quick work of it. Seven hours later, my short ribs were literally falling off the bone and my house smelled delightful. In terms of flavor, if you’re making this recipe yourself, I’d recommend adding more salt to taste to both the ribs and the sweet potatoes. Other than that, it was and easy and tasty.
