Thoughts: If I had to remake this salad, I would chop up the apples into bite-sized pieces instead of slices. It looks beautiful when thinly sliced, but it doesn’t make it the easiest to eat. Other than that, this salad had a great flavor and was a refreshing seasonal salad. It’s a bit busy with some bold, almost overpowering elements, but it fits the season well. I wouldn’t make this on a regular basis, but it would be nice when hosting.
