Thoughts: Yes, this recipe should have been made with shrimp, but your girl is severely allergic to shellfish! Mango and avocado are also enemies. Instead of shrimp, I used chicken, left out the avocado entirely (can’t even breath around the stuff, and I kept the mango for the pictures and my husband. Even with all these changes, the bowl was SO FRIGGIN” GOOD! I used the same rub on the chicken and cooked it on a skillet. The chicken was fantastic, juicy, and delicious. My favorite part of it all was the salsa. Seriously, it’s SOOOO GOOD. Combining everything made for the most delicious bowl that would be perfect for meal prepping, or just to have for a healthy-ish lunch.
