Coconut Carrot Cake

Thoughts: In terms of flavor, this carrot cake was PERFECT. It had the right level of moisture vs. texture and it wasn’t too sweet. Truly, it was perfect. However, the moment I sliced the cake to make layers, I immediately screwed it up! UGH! It ended up as a lopsided “franken-cake” that I didn’t have the heart to try to decorate with effort or photograph. At least it was ABSOLUTELY DELICIOUS!
