Instant Chicken Gumbo

Thoughts: Not only was this my first time making gumbo, but it was also my first time ever TASTING IT! I’m allergic to shellfish, and gumbo traditionally has shrimp and/or crab in it. This chicken-only gumbo was totally safe for me to eat and it was SOOO GOOD! Like, warm-your-belly-and-soul while clearing your sinuses good! I used the pressure cooker and it was super easy and quick! I will definitely be making this again on a cold winter’s day!
